The first thing is when preparing the béchamel sauce, remember to sift the flour using a colander, this way you’ll prevent from forming lumps in the sauce.

If you want the ingredients to mix easily, you should heat up the milk in the microwave before adding it to the flour.

Lastly, remember that béchamel sauce is an easy preparation but it’ll require all of your attention.

This is why, when you’re making the sauce, just don’t stop stirring.

Ingredients

  • 1 head of broccoli
  • 1 onion
  • 3 garlic cloves
  • 2 tablespoons of olive oil
  • Parmesan cheese

For the béchamel sauce

  • 1 soup spoon of flour
  • 1 soup spoon of butter
  • ½ a L of whole milk
  • Nutmeg
  • Salt as desired

How to prepare Broccoli Bechamel

Put a pot with a water and a pinch of salt on the stove. While you’re waiting for the water to start boiling you can wash the broccoli and cut it in small pieces.

Once the water starts boiling, add the broccoli pieces and wait for 5 minutes.

Remember it’s very important for the broccoli to be tender; so, to make sure, you can prick it using a fork. But watch out! You can’t cook it for too long, otherwise it’ll break apart.

Once it’s ready, drain it and set it aside.

Next, put a frying pan on the stove and add the olive oil. While it heats up, clean and cut the garlic and the onion. Add them to the frying pan and sauté until they start releasing an aroma.

Add the broccoli and stir. At last, add this preparation to a tray.

Now, it’s time to prepare the béchamel sauce. To do so, add the butter to the frying pan and when it’s hot add the flour. Stir until the flour has toasted.

Start incorporating the milk bit by bit and without stopping stirring. Once you’ve added all the milk, season with the salt and the nutmeg before removing it from the stove.

Spread this sauce all over the broccoli covering all of it and sprinkle some grated cheese on the preparation. Put it in the oven for 8 to 10 minutes at a temperature between 180 and 200ºC.
